WordPress Theme/Plugin Customization WPLMS

Theme = WPLMS
Plugins = WPLMS Assignments, ITThinx Groups

The theme is WPLMS, it is a Learning Management System theme where visitors to the site can sign up for offline classes that also include online courses to help Upgrade to see actual info has an assignment feature where students can upload assignments. Currently the system emails the instructor when an assignment is submitted. Our client (the instructor) wants the emails to go to her assistants instead.

Each class has different intakes (groups of students based on the date of the offline instruction). We separate these classes using the ITThinx Groups plugin. Each group contains an assistant instructor (or 2). We need custom code for the WPLMS theme (which includes it's own plugins) that will email the assistant instructors instead of emailing the instructor.

We don't mind changes being made directly to the plugin/theme itself (however we prefer child theme only changes whenever possible).
