Insert Hand-Written invoices's details into a table of Google Sheets.

Hi
We are looking for assistance in manually inserting English hand-written Invoices into a google work sheet on the computer.
There are approximately 1100 invoices that are currently photo copied to a PDF file and need to be inserted one by one to a Sheet containing all the details appearing on the invoices (Name/ Date/ Address/ Phone/ Price Etc.)
All the exact details will be given at the start of the job.
