We want to do the following for our client's website. 301 redirect to preserve most of the juice and there is no problem doing this from HTTP to HTTPS but I would do this using htaccess or at the registrar level rather than a plugin as it runs much faster.

Don't worry about the shift from www. to shop. as the subdomain, the 301 will take care of all that once it is done.

If you still have a backup of the old site, put it on a server somewhere and run Xenu or screaming frog over it. Do the same for the new site and then you have a list of all your URLs old and new and you can map them to each other really easily. You can even create the code for the htaccess file from a CSV with a bit of manipulation in text pad.

Once you have set up your redirects go into search console and go through each URL (old and new) and fetch each as Google to get it all reindexed as fast as possible.
